Shortbread cookies with raspberry jam filling.




Do you remember those shortbread cookies? Well, this is the same recipe turned into thumbprint/sandwich with a hole cookies filled with rasberry jam and dusted with some confectioners' sugar at the end. Really worth making it.
It's also really worth using raspberry jam because it's kind of tangy and goes super well with the sweetness of the shortbread dough.
I used Ina's recipe for the shortbread dough and Trader Joe's raspberry jam. This one seems great too.
