Orange muffins


This recipe is so easy to make (you don't even need to use a mixer) and I like the fact that it contains yogurt which I think gives it that kind of something else..The ingredients are things we all have constantly in our kitchen so, go for it!





























Orange muffins
(makes about 12 muffins)

110 gr butter, at room temperature, diced
200gr sugar
2 eggs
240gr yogurt
260gr all-purpose flour
1/2 teaspoon baking powder
zest of one orange
confectioners sugar, to serve 


Preheat the oven to 170C. Stir with a whisk the butter and sugar in a bowl until they become a smooth cream. Add eggs one by one continuing the stirring. At this stage the mixture may seem a bit crumbly but don't worry. Incorporate the yogurt and then the flour, baking powder and zest, stirring with a spatula. Lay the paper muffins to the muffin molds and fill with the mixture. Bake the muffins for 20-25 minutes. Let them cool a bit and sprinkle with confectioners sugar.
