Chicken bites with cashews and celery.


This is one of our favorite dishes. We are making it constantly at home when we want to have chicken, it's really easy to make and most importantly: delicious. We serve it mostly with basmati rice which is totally aromatic and in my opinion the greatest combination.

(I like to "hide" the rice underneath the chicken so you can't really see it in the photo-but I promise you it's there..;) )


Here is the recipe:

Chicken bites with cashews and celery, for 4 people

2-3 chicken breasts (it depends on the size), cut in small pieces
3 celery sticks, sliced
150 gr cashews
4 tbsp sesame oil or olive oil
4 tbsp soy sauce
1 tbsp sweet (or not) red wine
1 tbsp honey
1 tbsp white wine vinegar

If you have a wok, make it there otherwise a wide pan or even a pot is fine. Heat the oil on high heat until it's really hot. Put the chicken pieces and celery sticks and saute really well, stirring continuously. Put the cashews and stir once or twice. Add the rest of the ingredients together with a cup of water. Allow to cook on high heat. Your dish will be ready in 5 minutes or so!
